SOME INTRODUCTION ABOUT VEGETABLE BIRIYANI:
Vegetable biriyani may be a perfect and delicious dish made
with vegetables like beans, carrot , potato, basmati rice , ghee, spices etc..
This can be tasty and easy veg biriyani that was liked by all .
Vegetable biriyani is an Indian dish that was made with
vegetables and rice flavoured especially with the saffron milk or turmeric
powder.
According to me , I packed this delicious dish with
fragrance vegetables , rice and aromatic flavoured spices, crunchy nuts etc.. that creates our mouth watering.
ABOUT THIS RECEIPE:
There are various styles of biriyani which will be prepared by us but most of the people like
one pot biriyani or presser cooker biriyani . Biriyani is a perfect lunch meal
that may be served with raita, kuruma, salna .
In this receipe I am going to prepare one pot veg biriyani
or pressure cooker vegetable biriyani.

INGREDIENTS:
Basmati rice – 1 cup
Oil or ghee - required
Bay leaf -1
Cinnamon - 2
Cardamom - 2
Cloves - 3
Jeera – 1 tsp
Fennel seeds – 1 tsp
Star anise – 1
Onion - 2
Green chilli - 2
Ginger garlic paste – 1 tsp
Mint leaves - few
Coriander leaves - few
Tomato - 2
Cauliflower -1/2
Beans -2
Carrot -2
Potato -2
Green peas- few
Red chilli powder- 1 tsp
Turmeric powder – 1/2 tsp
Salt - required
Garam masala – 1 tsp
Yogurt/ curd – 2 tbsp
Lemon juice – 1 tsp
Water - required
Saffron milk – 1 tsp
Some fried onions
Fried Cashews- 6
HOW TO MAKE VEGETABLE BIRIYANI?
- Wash and soak the basmati rice for 15 minutes. Meanwhile rinse and chop the vegetables and keep it aside.
- Heat a pressure cooker add 1 tbsp of ghee and add whole spices

Cardamom
Cinnamon
Star anise
Cloves
Jeera
Fennel seeds
- Once the spices begin to crackle add largely and thinely chopped onions and a few salt and saute well.
- Then add green chilli and mix well until onion turn into golden brown.
- Next add ginger garlic paste and saute until the raw smell goes. Then add tomatoes and saute well.
- Now its time to feature chopped vegetables , add the veggies

Beans
Cauliflower
Green peas
Potato
- Stir and blend on high flame about 4-5 minutes.
- Now add the following ingredients
Mint leaves
Red chilli powder
Garam masala
Curd
Lemon juice
Turmeric powder
Required salt
- Stir and mix the subsequent ingredients for about 3-4 minutes.
- Now add the wash and soaked basmati rice and spread it evenly without breaking the rice.
- Pour 2 cups of water and provide a stir mix and taste the water it has a rather salty taste.
- Cover the pressure cooker with a lid and cook on the medium high flame for about 1 whistle.
- When the pressure releases gently fluff the rice and sprinkle 1 tsp of saffron milk, some fried onions ,cashews and coriander leaves.
- Serve veg biriyani with raita or kuruma.
NOTES:
- You can also add wash and soaked soya chunks in this receipe.
- You can serve it hot at rainy seasons it gives a pleasure feel.
- To cook in a pot- cook on a low heat until all water is absorbed and cook for 15 minutes and turn off the flame.
