INTRODUCTION:

 

Vegetable kurma is a delicious south Indian lunch meal. It is amazingly delicious and easy to make this.

It can be served with roti, rice flavoured chappathi, idli, dosa makes perfect combination.

 

Kurma is also known as korma gives a aromatic flavoured. It is made with nuts, veggies, onions, tomatoes and coconut milk.

 

The hotel style veg kurma and parotta is favorite to all.it is liked by most people. It is paired wonderfully with naan , jeera rice and other variety rice.

The tempering spices like cinnamon, cardamom, bayleaves, cloves brings a wonderful aroma to make a flavourful and delicious kuruma.

 

The chopping time of vegetables takes a longer time . in this receipe we use veggies like carrot, beans, cauliflower, potatoes, beans etc..lets gets started our receipe.

INGREDIENTS:

Oil – 3 tbsp

Mustard seeds – 1/2 tsp

Jeera seeds – 1/2 tsp

Fennel seeds – 1/2 tsp

Cinnamon – 1

Cloves- 1

Cardamom- 1

Bayleaf - 1

Onion (largely and thinely sliced) – 3

Tomato – 3

Green chilli- 2

Ginger garlic paste – 1 tsp

Carrot – 2

Beans – 4

Green peas – 2 tsp

Cauliflower – 1/2 cup

Potato - 1

Salt – required

Water- required

Turmeric powder – 1/4 tsp

Red chilli powder – 2 tsp

Garam masala – 1 tsp

Coriander powder – 1 tsp

For blending:

Grated coconut – 1 small bowl

Fried gram – 2 tbsp

Fennel seeds – 1 tsp

Water – required

Cashews – 6

Green chilli- 2


HOW TO MAKE VEGETABLE KURUMA?

  • In a mixie blender add

             Grated coconut

             Cashews

             Fried gram

            Green chilli

            Fennel seeds

            Water

  • Add this ingredients and make it to a smooth paste.
  • Heat oil in a pan and add the whole spices

                        Mustard seeds

                       Jeera seeds

                       Fennel seeds

                       Cardamom

                       Cinnamon

                       Cloves

                       Bay leaf

  • When the spices begin to crackle add in curry leaves.
  • Saute for few seconds.
  • Add in largely and thinly sliced onions and some salt.
  • Saute until onions becomes golden brown.
  • Then add 2 slited green chilli.
  • Add in ginger garlic paste and saute until it raw smell goes.
  • After that add tomatoes then saute for 1 minute.
  • Now its time to add all veggies

                       Carrot

                       Beans

                       Potato

                     Cauliflower

                     Green peas

  • Close the lid of the pan and cook for 3 to 4 minutes.
  • Once it gets cooked add the whole spice masalas

                       Turmeric powder

                        Red chilli powder

                        Garam masala

                        Coriander powder

                        Required salt

  • Mix everything and cook about for 1 minute.
  • Then add the smoothly blender paste and required amount of water.
  • Stir and mix everything.
  • Taste the water add some salt and spices powders if needed.
  • Give a gentle stir and mix everything.
  • Cook this kurma until it gets thick consistency.
  • Once kurma gets thickness turn off the flame .
  • Garnish with coriander leaves.
  • Serve it with chappathi, poori, steamed rice, idli, dosa.

 

NOTES:

  1. If you add or skip any veggies you can add .
  2. Adjust spices and saltness as per your taste.
  3. Coconut is the main ingredients in this receipe you cannot skip this.
  4. You want almond you can also use to blend .
  5. You can also add curd to get a thickness.
  6. If you don’t like fennel seeds you can skip this.
