Masal
Vada (Masala Vada), a crispy, spicy and yummy snack. I have seen many of
the working persons, in the evening time, they used to go to their Pantry or
some fast foods shops and they have these yummy masal vadai with hot tea or
coffee. The taste is splendid. The combination of tea/coffee with Masal Vadai
is the ultimate snack for a wonderful evening.
There are
many variations with respect to the masalas added in the vada. Recently I had
this yummy Vada in my friends house and it was so scrumptious. Traditionally, I
add only fennel seeds along with green chillies and ginger. But from my friend
I came to know that she has added even jeera and corn flour which gives an extra flavour. So I have
included some more masalas and it turned to be a mouth-watering snack.
How much ever chaat dishes that are
getting popular, how much ever street side snacks that are popular, still our
Masala Vadai stands top always :-). Masal vada with hot tea/coffee is a
stunning combination. Even now lots of street side shops and even popular
restaurants serve Masal Vada as their evening snack! Try this crispy Vada and
let me know your comments. So lets gets started our receipe.
INGREDIENTS REQUIRED FOR MAKING KADALAI PARUPPU VADAI:
Oil – for frying
Onion – 3 finely chopped
Green chilli – 2 finely chopped
Kadalai paruppu / channa dal – 1 small bowl
Jeera / cumin seeds – 1/2 tsp
Sombu / fennel seeds – 1/2 tsp
Red chilli powder – 1 tsp
Salt as needed
Curry leaf – finely chopped
Coriander leaves – finely chopped
Garam masala – 1/2 tsp
Corn flour – 1 or 2 tsp
Rice flour – 1 or 2 tsp
Ginger – 1/2 tsp
STEPS FOR MAKING KADALAI PARUPPUU VADAI:
- Wash and soak kadalai parupu or channa dal for about 30 minutes.
- After 30 minutes , grind coarsely by using mixie jar.
- Transfer it to a clean bowl and add require ingredients like finely chopped onions , green chillies.
- After that add ginger , cumin seeds, fennel seeds and other ingredients like red chilli powder , salt , corn flour, rice flour , curry leaf , coriander leaves , garam masala .
- Mix everything by using your hands
- Heat oil in a pan for frying , once oil gets heated flatten the vada mix by using banana leaf.
- Drop the flatten vada mix into a oil.
- Once vada gets golden brown colour transfer it to a tissue paper and drain off the excess oil.
- Repeat the same procedure for remaining vada mix.
- Once its gets done turn off the flame and serve it with ketchup.
MY TIPS :
- Make sure you can fry vadas by using medium high flame.
- You can serve it with tomato ketchup even mayonnaise also tastes good .
- If you don’t want garam masala flavour you can skip this.
- You can flatten the vada by using oil greased banana leaf or hands also.
- Rice flour is for crispyness . so don’t skip this step.
- Make sure you did not add water to mix the batter .
- If you not able to blend the batter you can add 2 to 3 drops of water and mix everything.
- You did not soak the channa dal for longer time.
- Coconut chutney also makes perfect combination in this receipe.
- Instead of ginger you can also add ginger garlic paste.
