Traditional Chicken Biriyani

Chicken biriyani is a combination of chicken and rice that includes a layers of chicken , rice and some other ingredients. Biriyani has a variations includes prawn , fish , egg etc.. It is made with Indian spices. It is one of the favorite dishes to all. Biriyani is popular in India and other countries . we also use some dry nuts like cashews, raisins to add some flavour . Let’s gets started our receipe.

Chicken Biriyani

Ingredients:

Oil – As Needed

Basmati rice – 3 cups

Water – As needed

Salt – TO Taste

Chicken – 1/2 kg

Onion – 4

Tomato - 3

Green chilli - 4

Ginger garlic paste – 4 table spoon

Mint leaves – 1 cup

Coriander leaves – 1 cup

Yogurt/ curd – 1 cup

Red chilli powder – 3 tsp

Turmeric powder – 1 tsp

Garam masala – 2 tsp

Biriyani masala – 2 tbsp

Lemon Juice – As Needed

saffron milk - 3 tsp

For tempering:

Fennel seeds/ sombu – 1 tsp

Cumin seeds/ jeera -1 tsp

Cardamom/ yelakai – 3 crushed

Cloves/ krambu - 3

Bay leaf / brinji Ilai - 2

Cinnamon/ pattai – 2 small piece

 

Instructions:

  • For marination process, add in chicken and add turmeric powder, chilli powder, garam masala ,biriyani masala, salt, curd, onion, tomato ,ginger garlic paste , lemon juice and other seasoning ingredients.
  • Mix everything well and marinate for 2 to 3 hours in the fridge.
  • Meanwhile wash and soak basmati rice for 30 minutes.
  • After 30 minutes add the water, salt, cardamom, bay leaf, to the pot and bring it to boil. Once,it gets boiled add the rice and cook until it gets 70% cooked.
  • Once , it cooked drain off the water and keep it aside.
  • Fry some onions and keep it aside.
  • Heat oil in a pan , add marinated chicken and required water and cook evenly until it gets gravy consistent.
  • To assemble the biriyani. First , add the gravy at the bottom and spread evenly. Add half of the rice mixture at the top then add fried onions and add saffron milk.
  • Like, this layer the rest of the gravy and rice and cover the pot with a lid .
  • Without opening a lid , 15 minutes steam the biriyani.
  • After, 15 minutes open the lid slowly mix the biriyani and serve it hot with onion raita.

 

Notes:

  • We should also use fresh coconut oil to prepare this receipe.
  • Adjust the spices as per your taste.
  • Biriyani is often served with a onion raita , or a salad made up of cucumber, carrot onion.
  • You should garnish the biriyani with coriander leaves.
