INTRODUCTION ABOUT CORIANDER RICE/ KOTHAMALLI RICE:

Simple and seasoned rice based formula made with Coriander leaves. It is an optimal lunch box or tiffin box formula which can be filled in all things considered or with yogurt based raita. Coriander rice is a solid rice formula which can be ready in practically no time.

Generally, coriander leaves are it is ordinarily presented with plain yogurt or even with onion tomato raita , even appalam also make a best combination in this flavour.

Coriander rice 





Ingredients:
  1.  2 cups cooked rice, cooled
  2. 1 cup fresh coriander/cilantro leaves
  3. 1–2 green chilies
  4. Dry red chilli-3
  5. ½-inch ginger
  6. 2 garlic cloves
  7. 2 tbsp grated coconut
  8. 1 tbsp oil 
  9. ½ tsp mustard seeds
  10. ½ tsp cumin seeds
  11. 1 tsp urad dal
  12. 1 tsp Channa dal
  13. 1 small onion, thinly sliced
  14. 8–10 cashews or peanuts
  15. ¼ tsp turmeric powder 
  16. 1 tsp lemon juice
  17. Salt to taste
Steps:

  1. Wash and soak 2 cups of rice and keep it aside.
  2. Cook the rice and keep it aside.
  3. In a mixie jar add coriander leaves green chilies, ginger, garlic, coconut, and 2–3 tbsp water and blend it into a smooth paste.
  4. Heat oil in a pan. Add mustard and cumin seeds, followed by urad dal , Channa dal  cashews/peanuts and dry red chilli.
  5. Add onion and saute until it gets soft and lightly golden.
  6. Further, add the coriander paste mixture and turmeric powder. Cook for 3–5 minutes, until the raw smell disappears and the mixture becomes aromatic.
  7. Add salt. and cooked rice and mix well.
  8. Cook for another 2–3 minutes on low heat. Turn off the heat and add lemon juice.
  9. Serve hot.
Tips:
     
    1. You can add spices power like red chilli powder, garam masala.
    2. Instead of oil you can use ghee.
    3. Coconut is completely optional.
    4. It goes well with appalam, pickle, potato fry.
    5. You can also add gress peas if you want.
