WHAT IS VATHAKULAMBU?

Vathakulambu receipe is one of the simpliest receipes. This vathakulambu receipe and its making method are really mouth watering. It is used by preparing manathakali vathal it gives health benefits too.

 

The taste of manathakali vathal kulambu is very delicious. You can get little bit of spiced, salty taste.

It is best to serve with some steamed rice. It can be also prepared by using sundried berries that is sundakkai . it gives  bitterness .

 

It can be accompanied with the vegetable side dish like potato fry , or any other kootu receipes or sutta appalam makes perfect match in this receipe. Let’s gets started our receipe.

INGREDIENTS:

Sesame oil – 2 tbsp

Mustard seeds – 1 tsp

Jeera seeds – 1 tsp

Fenugreek – 1/2 tsp

Red chillies – 2

Curryleaves – few

Hing – 1 pinch

Shallots/ small onions – 1/2 cup

Green chilli – 1

Garlic – 2 tsp

Tomato paste – 1/2 cup

Manathakkali – 4 teaspoon

Turmeric powder – 1/2 tsp

Red chilli powder – 2 tsp

Coriander powder – 1 tsp

Salt – required

Water – as needed

Tamarind –1 lemon sized.

Jaggery – 1/2 tsp

 

HOW TO MAKE VATHAKULAMBU:

  • Here I take 1 lemon sized tamarind ball . I suggest you to use dark tamarind.
  • Wash and soak tamarind in 1 cup of water .you can also use hot water to soak this tamarind.
  • Soak it for 20 to 25 minutes.
  • After 25 minutes squeeze the tamarind and extract the tamarind pulp in the water and keep it aside.
  • Heat 2 table spoon of sesame oil that is(gingely oil) in a pan. Then add 1 tsp of mustard seeds , 1 tsp of jeera and wait for crackle.
  • Then add fenugreek seeds , 2 red chillies and some curryleaves and wait for it to gets crisp.
  • Then add 1 pinch of hing.
  • Now add 1/2 cup of shallots .mix and saute well .
  • Then add green chilli , garlic , and cook for 1 minute.
  • Add in tomato paste and wait for oil gets separated.
  • Once oil gets separated. Keeping a flame low then add 4 tablespoon of manathakkali.
  • Stir and mix for some times until the manathakkali colour changes. Ensure that you should not over cook them.
  • Now add the spices like turmeric powder, redchilli powder, required salt , coriander powder and mix everything.
  • Add in the tamarind pulp.
  • Pour 2 cups of water
  • Give a stir and mix everything.
  • Let the vathakulambu come to boil on medium-low flame for about 15 to 20 minutes.
  • Continue the process until the kulambu gets gravy thickness.
  • Add 1/2 tsp of jaggery to give a little sweetness taste.
  • Check the taste and add more salt and spices if you want.
  • Once it gets done turn off the flame .
  • Serve vathakulambu with steamed rice, dosa, accompanied with some sidedish like kootu and appalam.

 

NOTES:

  • For the authentic taste you can use sesame oil in this vathakulambu receipe.
  • You can also add some sambar powder in this receipe.
  • You can also add some rice flour to get a thickness.
  • You can also use sugar instead of jaggery to get sweetness.
  • Instead of manathakkali vathal you can also add sundakkai vathal.
  • You can also add some vadagams in this receipe
